A collaboration between Gutter&Stars urban winery and Vault Aperitivo, this striking and layered white vermouth is one of a kind.
Made from a base wine of Crouch Valley-grown Chardonnay from the 2023 vintage - aged in ex-Burgundy oak barrels for 30 months - it takes its botanical cues from locally-grown flowers, herbs and plants.
Each distinctive botanical has been sourced by growers from the east of England, and they include magnolia, saffron, elderflower, fennel, bay, lemon balm, wormwood, thyme and cola plant.
Enjoy on the rocks, with a dash of good tonic water or as part of the ultimate wild-foraged martini (recipe below).

Ingredients:
15ml Gutter&Stars x Vault 'Wildflowers' Vermouth
70ml Gin or Vodka (from the freezer) - preferably Vault
Tiniest pinch of Maldon sea salt (2-3 flakes)
Something green from the garden
Method:
Stir the vermouth, spirit of choice and sea salt down over plenty of ice for 30-45 seconds. Strain into your favourite cocktail glass and garnish with something bright and green: a sprig of thyme, oregano or whatever you've got to hand.
