Single-site Chardonnay from Missing Gate Vineyard is Essex’s Crouch Valley was picked by hand then whole bunch-pressed into fourth-use French oak barrels.
Following a long and cool fermentation the wine underwent MLF in barrel and was matured on the gross lees for 18 months with no battonage.
The wine was bottled in May 2025 and underwent secondary fermentation in bottle. Just 300 bottles were produced.
No animal products or derivatives were used to make this wine.
