Our first ever Pinot Gris, made from grapes grown at Bromley Brook Vineyard in Essex. Textural and tangy with grapefruit-flecked acidity and notes of pear, almond and gooseberry, this powerful wine offers a dash of spice and salinity on the finish.
Single-site Pinot Gris was picked by hand on a wet and windy October day, it was the last fruit of the 2024 vintage. The grapes were gently whole-bunch pressed and the juice immediately racked into an egg-shaped tank where it underwent a ‘wild’ fermentation.
Following a long and cool fermentation the wine was racked off its gross less and aged in a neutral oak barrel (228 Litre, ex-Burgundy) for eight months with no battonage.
The wine was bottled on 26th July 2025. Just 280 bottles were produced.
No animal products or derivatives were used to make this wine.
