This Essex-grown Bacchus is elegant and abundant with aromatic notes of lime, matcha and cut grass. Racy and rounded it’s the perfect spring/summer serve.
Single-site Bacchus from Lion’s Walk Vineyard was picked by hand and gently whole-bunch pressed. The juice was racked into barrel for fermentation using non-Saccharomyces and ‘neutral’ Champagne yeasts.
Fermentation took 15 days, then the wine was racked off its gross less and aged in neutral oak barrels (228 Litre, ex-Burgundy) in a 'fumé' style. It matured on the fine lees for five months with no battonage
560 bottles were produced.
